YOGI TEA® Ginger Lemon – Chard pasta

This tasty and healthy pasta dish combines the refreshing power of YOGI TEA® Ginger Lemon with nutritious ingredients such as Swiss chard, pine nuts and yeast flakes.

The warming spices such as cumin and fennel seeds give the dish a tangy flavor that is perfect for a light, vegan meal. The tea adds a subtle but invigorating ginger and lemon flavor to the creamy sauce, giving the dish a surprising twist.

  • 3 YOGI TEA® Ginger Lemon teabags
  • 400 g pasta (spaghetti or tagliatelle)
  • 1 onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • ½ tsp cumin seeds
  • ½ tsp fennel seeds
  • ¼ tsp coriander seeds
  • 50 g pine nuts
  • 2 tbsp lemon juice
  • 100 ml oat cooking cream
  • 3 tbsp yeast flakes
  • Salt and pepper

 

 

 

Preparation

 

1. Pour 100 ml of water over the tea and leave to infuse for 10 minutes. Bring a pot of 2 l salted water to the boil and cook the pasta in it until al dente according to the package instructions.

 

2. In the meantime, peel and finely dice the onion and garlic. Crush the fennel, coriander and cumin in a mortar. Cut the leaves of the chard from the stems; cut the stems into fine strips and wash thoroughly. Also cut the leaves into fine strips and wash thoroughly (separate from the stems!).

 

3. Roast the pine nuts in a hot pan without oil until golden, then leave to cool in a bowl. Heat the olive oil in the same pan and first fry the spices from the mortar briefly in it, then sauté the onion and garlic in the oil until translucent.

 

4. Now add the chard stems to the pan and sauté for 2–3 minutes before adding the chard leaves. Fold them in thoroughly, allowing them to gently wilt. After a few minutes, mix the tea and oat cream into the chard and season with salt, pepper, lemon juice and yeast flakes. Serve the pasta together with the chard sauce and the pine nuts.
